This is a perfect dish for a spring time picnic or warm summer night. Crisp and refreshing, this cole slaw includes a healthy dose of protein and a little crunch! This is truly a great dairy free alternative to traditional cole slaw, and can be whipped up quickly with leftover chicken if needed, just be sure to let the chicken cool completely if you make it fresh. Keep the dressing on the side and it becomes an instant meal prep!
INGREDIENTS
12oz cooked chicken, shredded or cut into small cubes
1 cup cabbage, shredded
1/2 cup carrot, shredded
1/2 cup red bell pepper, sliced
1/2 cup red onions, sliced
1/2 cup fresh cilantro, chopped
1/4 cup lime juice
1/2 tsp cumin
salt and pepper, to taste
DIRECTIONS
Combine the chicken, cabbage, carrot, bell pepper, onion, and cilantro in a medium bowl.
In another bowl, whisk together the lime juice and spices to make a dressing. Pour the dressing over the salad and toss gently. Refrigerate before serving, makes 2 servings.
