Pork Chops with Apple Slaw

This apple coleslaw is a refreshing seasonal side dish that can complement a variety of meals, especially perfectly cooked pork chops! This dish is easy to customize to ensure everyone at your table will love it! Feel free to play around with your pork seasonings or adjust the acidity of the slaw dressing according to your taste preferences.

INGREDIENTS
4 8oz pork loin chops
3 tbsp Dijon mustard, divided
Salt
Black pepper
1 tsp garlic powder
1 tsp thyme
1 tsp sage
1 fuji apple
1 granny smith apple
1 head green cabbage, shredded
1 carrot, shredded
3 tbsp olive oil, divided
2 tbsp apple cider vinegar
1 tbsp honey
Fresh parsley (optional)

DIRECTIONS
Pat the pork chops dry with a paper towel. Rub 2 tbsp of dijon over the chops. Season with salt, pepper, garlic, thyme, and sage. Let sit while you prepare the apple slaw.
Core the apples and slice thinly into matchsticks. Add to a large bowl with the shredded cabbage and carrot.
In a small bowl, whisk together 2 tbsp of olive oil, apple cider vinegar, honey, remaining 1 tbsp of Dijon mustard, salt, and pepper until well combined. Pour the dressing over the apple mixture and toss to ensure the slaw is evenly coated.
Place a large pan over medium-high heat. Add the remaining 1 tbsp of olive oil to the pan. Sear for about 3-4 minutes on each side or until they develop a golden-brown crust. Reduce the heat to medium and continue cooking for about 5 minutes, or until the pork chops are cooked through.
Let the chops rest for about 5 minutes before slicing. Toss the slaw and top with some fresh parsley as garnish before adding to your plate with the pork chops and enjoy!
