Baked Sweet Potato Latkes

Most people associate latkes with Hanukkah as its a traditional Jewish dish, but some form of potato pancakes are present in all potato-eating cultures around the world! While these are certainly not traditional, we love this fresh take using sweet potatoes for a slightly sweet yet savory festive comfort food!

INGREDIENTS
2 lbs sweet potatoes, grated
1 medium onion, finely chopped
2 eggs, beaten
½ cup coconut or almond flour
¼ tsp baking powder
½ tsp salt
½ tsp ground cinnamon
¼ tsp ground nutmeg
1 green onion, chopped on the bias
1/4 cup Greek yogurt (optional)

DIRECTIONS
Preheat oven to 400 degrees and coat a baking sheet with coconut oil
In a large bowl, combine the sweet potatoes, onion, and egg. In a separate bowl, combine the flour, baking powder, salt, cinnamon, and nutmeg. Then mix the dry ingredients into the large bowl of sweet potato mixture.
Drop quarter cupfuls onto the baking sheets, and flatten with a spatula. Bake for 25 minutes. Flip and bake for an additional 10 minutes. 
If desired, add a teaspoon of greek yogurt on top of each latke or place on the side for dipping. Top with green onion and enjoy!
